HEPES buffer is widely used in cellular biotechnologies, since it is able to maintain physiological pH, despite changes in СО2concentration in the atmosphere (unlike bicarbonate buffer). When temperature decreases, dissociation of HEPES decreases. This makes it a more effective buffer to maintain the structure and enzymes work when temperature decreases.
